SPLIT PEA SOUP

Crockpot Recipe

I like to serve this with Cornbread.

2 C uncooked green split peas
1/3 C uncooked barley
10 C water
2 bay leaves
2 T olive oil
1+ C carrots chopped
2+ cloves garlic minced
1 t dried thyme
1 t salt (or to taste)

Bring split peas, barley, water, and bay leaves to a boil. Reduce to a simmer and cook partially covered for 45 minutes stirring occasionally to keep from sticking.

Add all other ingredients and continue simmering for at least 30 minutes more . This recipe is really good the next day after all the flavors have a chance to blend. It will be very thick the next day, so just add some water to get the right consistency and heat it up. I find that I always need to use more salt than the recipe calls for.
