Another all time favorite.

butter
mushrooms
sauerkraut
swiss cheese
pumpernickel bread (I use my sourdough bread)

Saute the mushrooms in butter.

Build sandwich by buttering outside of bread slices and then putting buttered sides together. On unbuttered side that is up, place a slice of swiss cheese, top with sauteed mushrooms, then with sauerkraut, and finally another slice of swiss cheese. Place butter side down in skillet over medium-low heat and place other slice on top. Cook until bread is crisp, then turn and cook other side the same. Fabulous served with homemade dill pickels!
