This recipe is one of our absolute favorites. I grow spinach just so I can have these sandwiches. My friend Karen came to visit one day and brought this recipe with her. She told us it had won an award for the best new vegetarian dish of the year. Once you taste it, you'll know why!
1 10 oz pkg frozen spinach-thawedMix the spinach, lemon, and garlic. Set aside.
Saute the mushrooms.
Build sandwich by buttering outside of bread slices and then putting buttered sides together. On unbuttered side that is up, place the sliced swiss cheese, top with sauteed mushrooms, then with spinach, and finally more sliced swiss cheese. Place butter side down in skillet over medium-low heat and place other slice on top. Cook until bread is crisp, then turn and cook other side the same. Before serving lift one piece of bread and garnish sandwich with alfalfa sprouts and sunflower seeds.
