CORNBREAD

This is our favorite corn bread recipe. For an extra special treat, stir 1/2 C whole kernel corn into the batter.

Oven Temperature: 425 F
1 C cornmeal
1 C whole wheat flour
4 t baking powder
3/4 t salt
1/4 C sugar
1/4 C butter-melted and cooled
2 eggs
1 C milk

Butter an 8 inch square pan.

In a large bowl combine the cornmeal, flour, baking powder, salt and sugar. Mix very well.

In a medium size bowl beat the egg. Beat in the milk and butter. Add to the cornmeal mixture and stir just until blended.

Scrape into the prepared pan and bake in preheated oven for 25 minutes, or until a knife inserted in the center comes out clean. The cornbread should be golden on top.
