CHOCOLATE PIE

2 boxes Mori-Nu Silken Firm tofu *
16 oz dark chocolate chips
1 t vanilla
pie crust-I like to use the Arrowhead Mills Chocolate Cookie Crust
fresh fruit for garnish

Prepare the crust by brushing with water or egg white and prebaking in a 350 ° oven for 5 minutes. Set aside to cool.

Place tofu and vanilla in a blender and blend until very smooth.

Melt chocolate chips in glass bowl over boiling water in a pot.

Slowly add the melted chocolate chips to the blender while the blender is running on low. Once it has blended completely, pour contents into cooled pie crust.

Place in refrigerator for 2-4 hours or until pie is firm.

Serve with fresh fruit. A mixture of bananas, blackberries, kiwi, and strawberries is superb.

* It really does make a difference if you do not use the Mori-Nu tofu. I learned the hard way and had a case of tofu that I didn't know what to do with! I don't advise trying alternative tofu.
