1 C W W flour
1 C flour
1/2 C sugar
1 T baking powder
1 t salt
1/2 C butter-melted
1/2 C fresh squeezed lemon juice
2 large eggs-beaten
2 T lemon rind
Combine dry ingredients. After butter cools, stir in juice, rind, and eggs. Mix all ingredients together until well blended. Fill muffin tins and sprinkle with a bit of sugar. Bake @ 400 F 15-20 minutes. Makes 12 muffins.
