BUTTERMILK CORNMEAL MUFFINS

1 1/2 C cornmeal
1/2 C W W flour
1 T sugar
4 t baking powder
1 t salt
1/4 C butter-melted
3/4 C buttermilk (1 T apple cider vinegar + milk to = 3/4 C)
2 large eggs

Combine dry ingredients. After butter has cooled stir in buttermilk and eggs. Add to dry ingredients and blend well. Pour into muffin tins and bake @ 425 F for 15-20 minutes. Makes 12 muffins.
