Believe it or not, these muffins can be made sugar free by omiting the 1/2 C of sugar and increasing the mashed banana from 1 C to 1-1/2 C. I have also substituted olive oil in place of the butter when I was low on butter.
2-1/4 C hard red wheat flourIn mixer beat the eggs with the milk, melted (cooled) butter, and banana. Add dry ingredients slowly. Beat until smooth. Stir in nuts and chocolate chips. Spoon into muffin tins. Sprinkle sugar on top of each muffin. Bake at 425 F for 20 minutes. Makes 12 muffins.
