POTATO PANCAKES

This is a recipe that belonged to my mother and her mother before her. I've never tasted any potato pancakes better.

2 lbs potatoes
1/4 C whole wheat flour
1 t salt
1/4 t nutmeg
2-4 T fresh parsley-finely chopped
1/4 C butter-melted
2 egg-beaten
apple sauce

Grate the potatoes. Place in a strainer and then plunge the strainer into a bowl of ice water and let stand for 10 minutes.

Mix together all other ingredients. Drain potatoes stir in the liquid mixture. Cook as for pancakes, browning on each side. (I find that it helps to press it down into a flat pancake when you put it on the skillet) Serve immediately and top with apple sauce.
