CORN PIE

3 eggs
1 C Chevre or cottage cheese
1/4 C whole wheat flour
1/2 t salt
1/4 t pepper

Whisk together the eggs, cheese, flour, salt, and pepper. Set aside.

1 yellow onion-diced
1 medium zucchini-shredded (about 2 cups)
1/2 t tarragon
1/2 t thyme
10-12 oz frozen corn, or fresh cut from cob

Saute the onion, zucchini, tarragon and thyme for about 10 minutes. Add the corn and cook 5 minutes more.

Butter a 9 inch pie pan. Put half of the batter in the bottom. Layer with the sauteed vegetables. Spread remaining batter on top. Bake @ 350'F for 45 minutes.
