CHEVRE PIE

1 lb (16 oz) chevre
3/4 C sugar
2 eggs
2 t vanilla
1 t lemon juice
graham cracker crust

Beat the chevre, sugar, eggs, vanilla and lemon juice until smooth. Pour into graham cracker pie crust. Bake @ 350'F for 25 minutes. Cool in refrigerator for 6 hours before serving.

We like to serve this with fresh fruit. Blackberries are especially good with it.
