WONDERFUL LENTIL SOUP

Conventional Recipe

This recipe makes a large pot of soup, great for company. It also freezes well for future quick meals. If you don't want so much, just cut the recipe by half. I serve this with cornbread.


2 C lentils, rinsed (we like red lentils)
1/2 C green split peas (optional)
1 onion, chopped
4 cloves garlic, minced
2 T olive oil
8 C tomatoes, canned or fresh, chopped with liquid
4-6 C water
3 large carrots, sliced
1 C celery
1 1/2 C corn
4 T parsley
2 bay leaves
1 t salt
1/4 t marjoram
1/4 t sage
1 t thyme

Rinse the lentils well with warm running water.

Place all ingredients in crockpot and cook on the low setting for 6 - 8 hours or until the lentils are tender. This is nice garnished with grated goat cheddar cheese.
