CABBAGE STRUDEL

This recipe comes from my friends Janalea and Marilyn.

1 1/2 C cooked brown rice
2 T olive oil
3 C chopped onions
8 C shredded cabbage
2 t dried dill
1 t salt
2 eggs
8 oz chevre (or cream cheese)
1 1/2 C grated cheddar cheese (or 1/2 C swiss and 1 C cheddar)

Saute onions till translucent.

Add cabbage, dill, salt, & pepper. Cook covered, stirring frequently until cabbage softens. Uncover & continue cooking till cabbage is limp, lightly browned, and excess moisture is absorbed. Remove from heat.

In a large bowl, mix the cooked rice with the chevre & grated cheddar. Add eggs and cabbage mixture. Mix well.

Place in a 9 x 13 pan. Bake @ 350' F for 45 minutes or till golden. Allow to rest 10 minutes before serving.
