FRESH FRUIT CRISP

1 C rolled oats
1/2 C whole wheat flour
1/2 t salt
1/4 C olive oil
1/4 C maple syrup + enough to equal 2/3 C total of oil and syrup
1/3 C nuts-broken up

Combine oats, flour, salt and nuts. Measure the olive oil into a glass measure. Add enough maple syrup to equal 2/3 C total. Stir the liquid into the dry ingredients until well mixed. Set aside.

5 C sliced fruit-we like a mixture of apples and whole cranberries. Other combinations that are nice are apple/pear and plumb/apricot.
2 T water
2 T maple syrup
1 t cinnamon
1/2 t nutmeg
2 T vanilla

Toss sliced fruit with the cinnamon and nutmeg. Mix together the water, syrup, and vanilla. Pour over fruit mixture and toss again.

Place fruit in an 8X8 pan. Top with the oat mixture, spreading it evenly over fruit. Bake covered @ 350'F for 45 minutes. Remove cover and return to oven and bake an additional 15 minutes.
