HUMMUS

This is blended in three batches. All of the ingredients listed will be divided into three equal parts before blending.

2 C dried garbanzo beans
6 T almond butter
9-12 cloves garlic, or to taste
3 T lemon juice, or to taste
12 T olive oil or enough to achieve desired consistency
3/4 C bean juice
1-1/2 t salt, or to taste

Place beans and 8 cups water in pan. Bring to a boil, reduce to simmer and cook 3 hours.

Divide cooked beans into three equal parts. Place 1/3 of the beans, 2 T almond butter, 3-4 cloves garlic, 1 T lemon juice, 4 T olive oil, 1/4 C bean juice and 1/2 t salt in blender. Blend to desired consistency.

Repeat with remaining ingredients.

Chill and serve with sliced bread, pita bread, olives, carrots, cucumber, or whatever your taste buds desire.
